Baked Potato & Chorizo Flautas

1/2 cup onion – diced
1/4 cup bell pepper – diced
1 Serrano chili – mined
1/2 pound Mexican chorizo
1 baked potato – diced
salt and pepper to taste
1/2 to 1 cup cheese (any kind you like) – shredded
8 – 10 corn tortilla shells
Saute the onion, pepper and chili over medium heat until tender. Add the crumbled chorizo and saute until sausage is cooked through then add the potato and cook until heated through.
Transfer to a bowl to cool, then add the grated cheese.
Heat about 1/2 inch of oil in a pan to about 360 degrees.
While the oil is heating, warm the tortillas until they are are pliable. Place about 1/4 cup filling or enough to roll into about a 3/4 to 1 inch roll on each shell and secure with a toothpick.
Saute them, turning one, for about 3 minutes per side on until lightly brown and crispy.
Serve with sour cream and salsa.
