I was looking for something different to make and decided on an onion, yellow bell pepper and hot pepper relish of sorts. Here is the Recipe:

Onion & Pepper Relish

Serving Size: 2 cups

1 1/2 cups Onion ; cut in 8ths and sliced
1/2 cup Yellow Bell pepper ; sliced same size as onion
1 each Habanero pepper ; seeded and minced fine
1 each Red Jalapeno pepper ; seeded and minced fine
1 each Serrano chiles ; seeded and minced fine

1 1/2 cups White Vinegar
1/2 cup Sugar
5 each Peppercorns
1 teaspoon Kosher Salt
1 each Bay leaf

Slice the onions and yellow pepper and place them in a large glass bowl. Mince the remaining pepper very fine and add them to the bowl and mix well. Now pack into a pint canning jar.
Mix the brine ingredients in a small pan and bring to a boil. Pour into the jar, cover and let cool. Now put in the refrigerator and let cure for a day or two for best flavor.
You can adjust the quantities of peppers till you get something you like. If you decide to mince all the ingredients and make it more into an actual relish, you might need more onion and yellow bell .
