Baked Dried Corn

This is the second in my series of Christmas Recipes.  I’m not sure when I started making this for the holidays.  I do know that I found the recipe in an old Amish- Dutch Cookbook that I picked up at a flee market many years ago. It uses Copes Dried Corn which seen to be local to Pennsylvania but fortunately it is available over the internet. Although the recipe indicated that you can grind the corn in a food chopper, I have never done that and it has turned out just fine.

Baked Dried Corn

Recipe By: Amish Dutch Cookbook
Serving Size: 16
Main Ingredient:

-= Ingredients =-
2 cups Dried corn
6 large Eggs ; beaten
4 cups Whole milk
2 tablespoon Butter
4 tablespoon Sugar
1 teaspoon Kosher or Sea salt

-= Instructions =-
To the 2 cups of corn add 4 cups of hot milk and let stand for 1 hour. Add the rest of the ingredients and bake 1 hour at 300° in a 9 x 12 inch pan. (Corn can be ground in a food chopper if desired)
Serve hot
