Baked Dried Corn

November 15, 2012 § Leave a comment

I found this recipe many years ago in an old Amish-Dutch Cookbook. It has been a Thanksgiving staple since I found it.

Ingredients
2 cups dried corn – I use John Cope’s
6 eggs – beaten
4 cups milk
2 T butter – melted
4 T sugar
1 t salt

Directions
Bring the milk just to a boil, pour it over the corn and let stand for 1 hour.
Add the remaining ingredients and pour into a buttered 9 x 12 baking dish.
Bake at 300 degrees for 1 hour or until a knife inserted in the center comes out clean.
