Spiral Path Farm

A friend of my wife’s was talking to her about Spiral Path Farm. They deliver organic vegetables to various pick-locations around the area. You sign up for weekly pickups. We decided to try their late fall option this year to see what it was like.
I picked up our first medium share this past Wednesday. This box contained two stalks of brussel sprouts, two butternut squash, three red beets, one onion, two garlic heads, a small bunch of kale, a small bag of arugula salad and four small sweet potatoes.
The easiest part was picking it up. Now come the hard part, deciding what to make based on what my wife will eat.
I decided today to roast one butternut squash to make Butternut Squash & Kale risotto and also roast the red beets while the oven was on. I have no idea what the red beets will turn into.
I will post recipes as I go.
