Squash & Apple Soup

1 small to medium Butternut Squash
3 Apples – I used a Braeburn, Golden Delicious & Macintosh
3 – 4 pieces of Orange Peel
1 cup apple cider
1 Can Chicken Stock
Cut the butterNut squash in half and remove the seed. Then slice into 1 inch slices, peel and cut into large dice.
Peel the apples, cut in quarters, core and cut into a large dice also.
Add the squash, apples, apple cider & orange peel into a pot and simmer until the apples and squash are tender.
Run the mixture through a food mill and place in a clean pot. Add salt and pepper to taste. Serve with sour cream.
This turned out pretty good. Maybe a little too sweet.
